Little pavs with syrupy mandarins

Tangy mandarin syrup drizzled over classic pavlova for a decadent finish.
Ingredients:
  • 3 mandarins
  • 110g caster sugar
  • 40.00 gm water
  • 1 cinnamon stick
  • 400g yoghurt
  • 6 pavlova nests
  • 35g pistachio
Instructions:
  • Peel 3 strips of zest from one mandarin and set aside. Peel the mandarins, separate into segments, cut each in half, and remove any seeds.
  • In a small pan, mix sugar and water over very low heat until sugar dissolves, about 5 minutes. Stir in zest and cinnamon stick and simmer without stirring until light golden, about 5 minutes. Add mandarin pieces, stir, cool, then remove zest and cinnamon stick.
  • Spoon creamy yogurt into each pavlova nest generously. Top with juicy mandarin slices and a sprinkle of crunchy pistachios.
