Little trifle cakes recipe

Impress your guests with these festive mini trifle cakes - a beautiful twist on a classic Christmas dessert. Layers of jelly and custard in individual servings, topped with cream and a raspberry. Perfect for a make-ahead treat, just allow 5 hours of chilling time before serving.
Ingredients:
  • 4 Mini Jam Sponge Rolls
  • 80ml (1/3 cup) sweet sherry
  • 125ml (1/2 cup) thickened cream
  • 410ml (1 2/3 cups) Vanilla Long-Life Custard
  • 12.00 gm gelatine powder
  • 85g pkt raspberry jelly crystals
  • 250ml (1 cup) boiling water
  • 300ml ctn double cream, whipped
  • 36 fresh raspberries
Instructions:
  • Slice each sponge roll into 9 pieces. Arrange one piece in the bottom of thirty-six 40ml silicone molds on a baking tray. Lightly drizzle the slices with sherry.
  • Whisk the thickened cream using a balloon whisk until stiff peaks form. Transfer the custard to a different large bowl.
  • In a small microwave-safe bowl, add 2 1/2 tbsp of water and sprinkle the gelatine over it. Let it sit for 2 minutes to soak, then stir gently to combine. Microwave for 20 seconds, making sure not to overheat. Use a fork to whisk until the gelatine dissolves. Allow it to cool slightly before using.
  • Gently combine the gelatine mixture with the custard, then gently fold in the whipped thickened cream. Transfer the mixture into a jug. Evenly pour over the cake slices, ensuring a 5mm gap at the top of each mould. Chill in the fridge for 1 hour to set.
  • In a heatproof jug, combine the jelly crystals with boiling water, stirring until dissolved. Allow to cool slightly for 15 minutes.
  • Drizzle the jelly mixture over the custard layer, and chill for 4 hours until firm. Gently release the cakes from their molds using a knife. Transfer to a serving plate. Fill a piping bag with whipped double cream fitted with a 1cm fluted nozzle. Pipe cream on each cake and garnish with a raspberry before serving.
