LittlePeeps' Truly Baked Potato Salad

Indulgent potato salad with bacon and scallions, reminiscent of a loaded baked potato.
Ingredients:
2pounds small potatoes
6slicesbacon, chopped
1cupsour cream, or more to taste
1cupshreddedsharp Cheddar cheese
3scallions, thinly sliced
Instructions:
In a large pot, cover potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, approximately 20 minutes. Transfer cooked potatoes to a bowl of ice water to cool completely.
Cook the bacon in a large skillet over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain on a paper towel.
Peel half of the potatoes, then chop both peeled and unpeeled potatoes together.
In a large bowl, mix together sour cream, sharp Cheddar cheese, scallions, salt, and ground black pepper. Toss in the chopped potatoes until well coated.
