Nutritious and flavorful chicken vegetable soup with soy and hot pepper sauces, and spinach for a delightful twist.
Ingredients:
  • 2 cups chopped onion
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups chopped celery
  • 1 cup julienned carrots
  • 1 cup minced leek
  • 4 cups chicken stock
  • 0.25 teaspoon hot pepper sauce
  • 0.25 teaspoon soy sauce
  • 6 ounces spinach, rinsed
  • 0.5 cup egg noodles
  • 0.5 pound skinless, boneless chicken breast halves, cut into bite size pieces
Instructions:
  • In a large soup pot over medium heat, warm oil. Add garlic, onion, red and green bell peppers, celery, carrot, and leek. Saute until onions are translucent and veggies are coated in the hot oil. Stir in stock and season with salt and pepper. If using hot pepper sauce and soy sauce, add them now. Simmer soup over low heat for about 40 minutes. Enjoy!
  • Add an abundance of spinach to the pot and cover to wilt. Don't fret about the volume; it will quickly cook down. Stir in noodles and chicken strips once the spinach is cooked. Ensure the soup is simmering throughout. After 5 minutes, enjoy a splendid hot soup. Serve immediately!
