Experience modern Filipino Chicken Adobo with traditional flavors.
Ingredients:
  • 3 tablespoons vegetable oil
  • 3 pounds boneless, skinless chicken thighs, rinsed and patted dry
  • 6 cloves garlic, peeled and thinly sliced
  • 0.5 cup soy sauce
  • 0.5 cup apple cider vinegar
  • 2 tablespoons pickling spice, wrapped in cheesecloth
Instructions:
  • In a large pot, heat oil over medium heat until it shimmers. Quickly cook the garlic for no more than 30 seconds. Add chicken to the pot and cook, stirring often, until it turns white all over without browning.
  • Combine soy sauce, vinegar, water, and pickling spice in a pot. Ensure the spice ball is fully submerged. Bring to a boil, then reduce heat to a simmer and cover, leaving a small opening for steam to escape. Cook for 1 hour, or until the chicken is tender.
