Indulge in a delectable loquat crumble by simmering fresh loquats for a mouthwatering filling.
Ingredients:
  • 8 cups fresh loquats
  • lemon, juiced
  • 1 cup sugar
  • 0.25 cup cornstarch
  • cooking spray
  • 1 cup all-purpose flour
  • 1 cup packed light brown sugar
  • 0.25 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 7 tablespoons cold butter, cut into small pieces
Instructions:
  • Prepare the loquats by removing the seeds and blossoms, then halve them before placing them in a saucepan. To keep them looking fresh, drizzle with lemon juice. Cover and cook over low-medium heat until they release their juices and simmer, stirring occasionally, for 12 to 15 minutes.
  • In a bowl, mix sugar and cornstarch, then pour over simmering loquats. Stir until well combined and return to a low simmer. Cook until filling thickens, about 2 minutes. Remove from heat and allow to cool.
  • Preheat your oven to 400°F (200°C) for the perfect cooking temperature.
  • Preheat a 9-inch cast-iron skillet in the oven for 5 minutes. Once heated, coat lightly with cooking spray and add the loquat filling to the skillet.
  • Gently measure flour using a spoon into a dry measuring cup and level with a knife. Mix together flour, brown sugar, vanilla extract, cinnamon, and salt in a bowl; use a pastry blender to cut in butter until the mixture looks like coarse crumbs. Sprinkle the mixture over the loquat filling.
  • Bake the skillet on a sheet pan in the preheated oven until the filling is thick and bubbly and the topping is browned, for about 25 minutes. Let it stand for 20 minutes before serving warm.
