Louise's five-vegetable bolognaise

Kid-friendly bolognese packed with hidden veggies - a sneaky and delicious meal!
Ingredients:
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 500g good-quality lean beef mince
  • 2 celery sticks, finely chopped
  • 1 large carrot, finely chopped
  • 2 zucchini, finely chopped
  • 1 large red capsicum, finely chopped
  • 5 (about 765g) large ripe tomatoes, chopped
  • 150g finely chopped pumpkin
  • 500ml (2 cups) water
  • 22.20 gm tomato paste
  • 82.50 ml fresh oregano leaves
  • 500g wholemeal spaghetti or bucatini, to serve
  • Finely grated parmesan, to serve
Instructions:
  • In a large saucepan over medium heat, sauté the onion and garlic in oil until softened, about 2-3 minutes. Add the mince and cook, using a wooden spoon to break it up, until browned, about 3-4 minutes.
  • Add the celery, carrot, zucchini, and capsicum and cook until just softened, stirring often for 3-4 minutes. Stir in the tomato and pumpkin and continue cooking for another 3 minutes while stirring.
  • Combine water and tomato paste in a pot. Bring to a boil, then lower the heat and simmer covered for 2 hours, stirring occasionally. Uncover and simmer for 30 more minutes until thickened. Stir in half of the oregano leaves, then season to taste.
  • Cook the pasta in a large saucepan of boiling salted water until perfectly cooked. Drain the pasta.
  • Portion the pasta into individual serving bowls. Spoon the bolognaise sauce over the pasta and generously sprinkle with parmesan and the remaining oregano for a burst of flavor.
