Indulgent hazelnut cake - irresistibly moist and stunningly beautiful. Perfect for sweet cravings!
Ingredients:
  • 180g unsalted butter, softened, plus extra to grease
  • 200g caster sugar
  • 6 eggs, separated
  • 120g plain flour
  • 12.00 gm baking powder
  • 250g hazelnut meal
  • 200g milk chocolate, chopped, plus 100g chocolate, to decorate
  • 40.00 ml hazelnuts, roughly chopped, to decorate
Instructions:
  • Preheat your oven to 180°C and generously grease a 2.5L gugelhupf pan.
  • Cream the butter and sugar until light and fluffy. Gradually add the egg yolks, one by one, incorporating each one thoroughly. Gently fold in the sifted flour and baking powder, followed by the hazelnut meal and chocolate.
  • Whip the egg whites in a spotless bowl until soft peaks form. Gently fold 2 tablespoons of the egg whites into the chocolate-hazelnut mixture to lighten it, then fold in the rest of the egg whites until just mixed. Transfer the batter to the pan and bake for 50-60 minutes, or until a skewer inserted in the center comes out clean. Allow to cool before serving.
  • Use a double boiler to melt the rest of the chocolate until smooth. Pour the luscious chocolate over the cake and sprinkle with hazelnuts for an elegant finish.
