Louisville Rice Salad

Create a customizable cold rice salad with endless ingredient options.
Ingredients:
1cupuncookedwhite rice
2cups water
0.5 cupvegetable oil
0.25 cuplemon juice
0.25 cupwine vinegar
1teaspoonwhite sugar
1tablespoonchoppedfresh chives
1tablespoonchoppedfresh tarragon
0.5 cuptoasted sliveredalmonds
0.5 cupraisins
0.5 cupmandarin orange segments, drained and coarsely chopped
0.5 cupfinely choppedonion
0.5 cupfinely choppedcelery
0.5 cupfinely choppedgreen bell pepper
0.5 cupgreen peas
Instructions:
In a saucepan, bring the rice and water to a boil over high heat. Then, lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
Allow the rice to cool for a minimum of 30 minutes, gently stirring occasionally. Then, transfer the cooled rice to a spacious salad bowl.
Combine vegetable oil, lemon juice, wine vinegar, sugar, chives, tarragon, and salt in a bowl, stirring until the sugar and salt dissolve.
Drizzle the dressing over the cooled rice and gently mix together.
Combine slivered almonds, raisins, mandarin orange segments, onion, celery, bell pepper, and peas with the rice mixture, gently toss to mix well.
Chill the salad in the refrigerator, covered, for at least 1 hour before serving.
