Create a customizable cold rice salad with endless ingredient options.
Ingredients:
  • 1 cup uncooked white rice
  • 2 cups water
  • 0.5 cup vegetable oil
  • 0.25 cup lemon juice
  • 0.25 cup wine vinegar
  • 1 teaspoon white sugar
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh tarragon
  • 0.5 cup toasted slivered almonds
  • 0.5 cup raisins
  • 0.5 cup mandarin orange segments, drained and coarsely chopped
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped celery
  • 0.5 cup finely chopped green bell pepper
  • 0.5 cup green peas
Instructions:
  • In a saucepan, bring the rice and water to a boil over high heat. Then, lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • Allow the rice to cool for a minimum of 30 minutes, gently stirring occasionally. Then, transfer the cooled rice to a spacious salad bowl.
  • Combine vegetable oil, lemon juice, wine vinegar, sugar, chives, tarragon, and salt in a bowl, stirring until the sugar and salt dissolve.
  • Drizzle the dressing over the cooled rice and gently mix together.
  • Combine slivered almonds, raisins, mandarin orange segments, onion, celery, bell pepper, and peas with the rice mixture, gently toss to mix well.
  • Chill the salad in the refrigerator, covered, for at least 1 hour before serving.
