Indulge in decadent soufflés with a hint of 70% cocoa dark chocolate for a rich, low-calorie treat.
Ingredients:
  • 4.20 gm coconut oil, to grease
  • 55g (1/4 cup) caster sugar
  • 40.00 ml raw cacao or dark cocoa powder
  • 5.00 gm cornflour
  • 125ml (1/2 cup) reduced-fat milk
  • 20.00 ml Grand Marnier liqueur
  • 1/2 tsp orange rind, finely grated
  • 40g dark chocolate (70% cocoa), finely chopped
  • 1 egg yolk
  • 2 egg whites
  • Raw cacao, or dark cocoa powder, extra, to dust
Instructions:
  • Preheat the oven to 200C/180C fan forced. Grease four 125ml (1/2 cup) ovenproof ramekins with coconut oil and sprinkle 3 tsp of sugar evenly inside each ramekin.
  • In a small saucepan, combine the cacao powder and cornflour. Gradually pour in the milk while whisking continuously until the mixture is smooth. Add the rest of the sugar, liqueur, and orange rind. Cook on medium-low heat, stirring constantly for 6 minutes until the sugar dissolves and the mixture thickens. Remove from heat and stir in the chocolate until it melts completely. Transfer to a bowl and allow to cool for 5 minutes. Finally, whisk in the egg yolk.
  • Whip egg whites with electric beaters until soft peaks form in a clean, dry bowl. Gently fold one-third of the egg white into the chocolate mixture, then fold in the rest. Portion into ramekins and bake for 15-17 minutes until puffed and set. Dust with extra cacao powder before serving immediately.
