Low-carb chicken nacho bites: Mini bell pepper halves stuffed with chicken, sour cream, and Mexican cheese - perfect for game day!
Ingredients:
  • 1 large cooked chicken breast, shredded
  • 1 cup pico de gallo, divided
  • 1 cup sour cream, divided
  • 1 cup shredded Mexican cheese blend
  • 1 tablespoon taco seasoning mix
  • 1 (8 ounce) package mini sweet bell peppers, halved lengthwise and seeded
  • 1 (2.25 ounce) can chopped olives
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together shredded chicken, 1/2 cup pico de gallo, 1/2 cup sour cream, 1/2 cup Mexican cheese blend, and taco seasoning.
  • Prepare a baking dish by spraying it with cooking spray. Generously stuff each pepper with the chicken mixture and arrange in the baking dish. Top the pepper halves with 1/4 cup of Mexican cheese blend, then garnish with olives and the remaining 1/4 cup of cheese.
  • Bake until cheese is melted and peppers begin to soften, 15-20 minutes. Serve each pepper topped with pico de gallo and sour cream.
