Keto-friendly broccoli and chicken soup with creamy Cheddar cheese sauce.
Ingredients:
  • 2 (14 ounce) cans chicken broth
  • 1 (8 ounce) package cream cheese
  • 0.25 cup butter
  • 1 tablespoon minced onion flakes
  • 1 pint heavy whipping cream
  • 1 (10 ounce) can chicken chunks, or more to taste
  • 3 heads broccoli, broken into florets
Instructions:
  • In a large pot over medium heat, melt together chicken broth, cream cheese, Cheddar cheese, butter, and onion flakes until smooth, about 3 to 5 minutes. Stir in heavy cream and chicken and gently simmer.
  • Fill a saucepan with water and bring it to a boil. Place the broccoli in a steamer insert, cover it, and steam for 4 to 5 minutes until tender. Drain any excess moisture in a colander.
  • Transfer the flavorful chicken broth mixture into a slow cooker and gently incorporate the fresh broccoli.
  • Cook on Low for 4 hours to allow the flavors to meld together beautifully.
