Light and creamy potato leek soup, perfect for a healthy meal.
Ingredients:
  • 0.5 teaspoon unsalted butter
  • 1 large white onion, diced
  • 2 ribs celery, chopped
  • 3 small leeks, cleaned and thinly sliced
  • 3 medium potatoes, peeled and chopped
  • 3 cups water, or more as needed
  • 3 cups 2% low-fat milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a medium stockpot over medium heat, melt butter until sizzling. Cook onions until slightly translucent for about 5 minutes, then add celery and cook for another 2 minutes. Stir in leeks and cook until limp, about 2 to 3 minutes.
  • Lower the heat and toss in the potatoes with 3 cups of water. Simmer until the potatoes are slightly tender, adding water as needed to keep them and the leeks submerged, for 20 to 25 minutes. Gently pour in the milk while stirring constantly. Season with salt and pepper, and heat through for 5 to 10 minutes.
