Indulge in a simple, guilt-free cheesecake for any occasion.
Ingredients:
  • 180g plain biscuits (such as digestive or Marie)
  • 90g unsalted butter, melted
  • 250g low-fat cream cheese
  • 250g Cottage Cheese
  • 250g low-fat plain yoghurt
  • 150g caster sugar
  • 2.20 gm vanilla extract
Instructions:
  • Preheat the oven to 160°C, ensuring not to use the fan setting. Line the base of a 20cm springform cake pan with baking paper.
  • Create the base by pulsing the biscuits in a food processor until crushed, then add in the melted butter and blend until well mixed.
  • Press mixture firmly into the springform pan base and bake for 10 minutes. Let cool before proceeding.
  • Blend the remaining ingredients in a food processor until smooth. Pour the mixture over the cooled base and bake for another 35-40 minutes until slightly set (it will firm up as it cools).
  • Allow the cake to cool in the turned-off oven with the door slightly open to prevent cracking on the top. Serve with fresh seasonal fruit.
