Try this flavorful Persian dish, Lubia Polo! One-pot meal with rice, ground beef, green beans, tomato sauce, and curry spices. Use a nonstick pan for a crispy rice crust when serving.
Ingredients:
  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 jalapeno pepper, finely chopped
  • 2 tablespoons curry powder
  • 5 cups chicken broth
  • 1 cup tomato sauce
  • 1 pound fresh green beans, cut into 1 inch pieces
  • 3 cups uncooked basmati rice, rinsed and drained
  • 3 tablespoons vegetable oil
Instructions:
  • Preheat a large nonstick pan with a lid over medium-high heat. Brown the beef until crumbly, about 5 to 7 minutes. Drain any excess grease. Add onion and jalapeño, cook until tender. Season with curry powder, then pour in chicken broth and tomato sauce. Bring to a boil before adding green beans. Reduce heat to medium, simmer until beans are tender, about 15 minutes.
  • Add the rice to the pan, cover, and simmer over medium heat for 10 to 15 minutes until most of the liquid is absorbed. Take care not to overcook the rice; it should be tender but firm. Transfer the contents to a bowl or heatproof container, then return the pot to the stove.
  • 1. Heat oil in a nonstick pan over medium heat. 2. Return cooked rice mixture to the pan. 3. Line the inside of the lid with a clean dish towel, folding the ends over the edges. 4. Cover the pan with the lid and cook over medium-low heat for 35 minutes without stirring. 5. Remove the lid and place a tray over the pan, then flip to unmold the rice with a crispy "tahdig" crust.
