Indulge in a decadent St. Patrick's Day Irish brownie with fudgy base, mint green buttercream, and rich chocolate topping.
Ingredients:
  • 4 (1 ounce) squares unsweetened chocolate
  • 2 cups white sugar
  • 1 cup margarine, softened
  • 2.5 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 4 cups confectioners' sugar
  • 0.5 cup butter, softened
  • 2 tablespoons milk, or as needed
  • 1.5 teaspoons peppermint extract
  • 6 drops green food coloring
  • 1.3333333730698 cups semisweet chocolate chips
  • 6 tablespoons butter
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • Put the unsweetened chocolate in a microwave-safe cup or bowl. Microwave in 15-second intervals, stirring each time, until the chocolate is smooth. Let it cool down a bit.
  • Pour the velvety melted chocolate into a spacious bowl. Combine with sugar and margarine until luxuriously smooth. Gently add eggs one by one until fully mixed, followed by 2 1/2 teaspoons of vanilla. Gently fold in flour until just combined. Spread the batter evenly into the prepared dish.
  • Bake the brownies in the preheated oven for 20 to 25 minutes until the top is dry and the edges start to pull away from the pan. The center might jiggle slightly, which is normal. Let them cool in the pan on a wire rack after taking them out of the oven.
  • In a large bowl, use an electric mixer to blend 1/2 cup butter and confectioners' sugar until smooth. Adjust the consistency with milk. Mix in peppermint extract and green food coloring. Spread over cooled brownies in the pan. Chill for 30 minutes.
  • In a microwave-safe bowl, combine chocolate chips and 6 tablespoons of butter. Microwave until melted, stirring every 20 seconds until smooth. Mix in 1 tablespoon of vanilla until well combined. Pour the mixture over chilled brownies and swiftly spread to cover. Chill in the refrigerator until firm, about 10 minutes. Cut into squares and serve.Enjoy!
