Quick and easy family-friendly pasta dinner.
Ingredients:
  • 350g penne
  • 100ml extra virgin olive oil
  • 1 chorizo sausage, chopped
  • 2 garlic cloves, finely chopped
  • 250g cherry tomatoes
  • 150ml white wine or chicken stock
  • 400g can diced tomatoes
  • 120g pea
  • 12 basil leaves, torn
  • 40.00 ml tarragon, torn (optional)
  • Grated parmesan, to serve
  • Tarragon, extra, to serve
  • Extra virgin olive oil, extra, to serve
Instructions:
  • Bring a large pot of salted water to a boil. Add the penne and cook until al dente according to package instructions. Reserve 1/4 cup (60ml) of the cooking liquid before draining.
  • Heat oil in a frying pan over medium heat. Add the chorizo and cook until golden and cooked through, stirring occasionally.
  • Simply cook garlic and cherry tomatoes in the pan for 2 minutes. Pour in wine or stock and cook until the liquid almost evaporates. Add diced tomato and peas, simmer for 3-4 minutes, then add reserved cooking liquid. Stir in penne and heat through for 2 minutes. Finish by adding basil and tarragon, if desired. Enjoy your delicious dish!
  • Portion the pasta into individual serving bowls. Top with a generous amount of grated parmesan and additional tarragon. Finish by drizzling with extra olive oil.
