Luke Mangan's penne pasta with chorizo, tomatoes and peas recipe

Quick and easy family-friendly pasta dinner.
Ingredients:
350g penne
100ml extra virgin olive oil
1chorizo sausage, chopped
2garliccloves, finely chopped
250g cherry tomatoes
150ml white wine or chicken stock
400g can diced tomatoes
120g pea
12basil leaves, torn
40.00 ml tarragon, torn (optional)
Gratedparmesan, to serve
Tarragon, extra, to serve
Extra virgin olive oil, extra, to serve
Instructions:
Bring a large pot of salted water to a boil. Add the penne and cook until al dente according to package instructions. Reserve 1/4 cup (60ml) of the cooking liquid before draining.
Heat oil in a frying pan over medium heat. Add the chorizo and cook until golden and cooked through, stirring occasionally.
Simply cook garlic and cherry tomatoes in the pan for 2 minutes. Pour in wine or stock and cook until the liquid almost evaporates. Add diced tomato and peas, simmer for 3-4 minutes, then add reserved cooking liquid. Stir in penne and heat through for 2 minutes. Finish by adding basil and tarragon, if desired. Enjoy your delicious dish!
Portion the pasta into individual serving bowls. Top with a generous amount of grated parmesan and additional tarragon. Finish by drizzling with extra olive oil.
