Luscious Lemon-Raspberry Bars

Elevate dessert with decadent lemon bars topped with creamy cream cheese and sweet raspberry preserves.
Ingredients:
  • 1 package Betty Crocker™ Sunkist® lemon bar mix
  • 1/3 cup water
  • 3 eggs
  • 1/2 package (8-ounce size) cream cheese, softened
  • 1/4 cup raspberry preserves
  • Powdered sugar
Instructions:
  • Preheat your oven to 350°F for both metal and glass pans. Combine Filling Mix, water, and eggs using a fork (it's okay if a few lumps are left); then set aside.
  • Press the ready-mixed crust (dry) into the bottom of an 8- or 9-inch square pan and bake for 12 minutes.
  • Place spoonfuls of cream cheese onto the hot crust and return the pan to the oven for about 2 minutes to soften the cream cheese. Gently spread the cream cheese over the crust. Stir the filling mixture and pour it over the cream cheese.
  • Bake for 35 to 40 minutes until the top is golden brown and the center is firm. Let it cool for 10 minutes, then spread preserves on top. Once completely cooled (about 1 hour), dust with powdered sugar. Cut into 16 bars (4 rows by 4 rows) for serving ease using a sharp or wet knife. Store covered in the refrigerator.
