Elevate fresh rock lobster with a rich garlic butter sauce for a luxurious canape.
Ingredients:
  • 100g butter
  • 3 cloves garlic, peeled, squashed
  • 20.00 ml chives, chopped
  • 4 western rock lobsters
  • 1 juice of lemon
  • Lemon wedges, to serve
Instructions:
  • With a precise cut, separate the head from each rock lobster. Halve the tail lengthwise and carefully remove the intestine.
  • In a small saucepan over low heat, melt butter. Stir in garlic and simmer for 1 minute. Take off the heat and mix in lemon juice and chives.
  • Present rock lobster topped with garlic butter and accompanied by lemon wedges.
