Middle Eastern date-filled pastries, perfect for holiday celebrations like Easter.
Ingredients:
  • 60g butter
  • 185g semolina
  • 150g plain flour
  • 40.00 gm caster sugar
  • 1.00 gm baking powder
  • 40g lard
  • 1 tsp orange blossom water
  • 85g date
  • 40.00 gm water
  • 30g walnut
  • Icing sugar mixture, to dust
Instructions:
  • In a bowl, mix semolina, flour, sugar, and baking powder. In a saucepan over low heat, melt lard and 40g of butter together. Pour the melted mixture into the dry ingredients. Stir in half of the orange blossom water. Cover the bowl with plastic wrap and refrigerate overnight.
  • In a saucepan over low heat, gently simmer dates, water, and the rest of the butter, stirring occasionally for 10 minutes until dates soften. Let cool for 30 minutes, then mix in walnuts and the remaining orange blossom water.
  • 1. Preheat the oven to 180°C. 2. Divide two-thirds of the semolina pastry evenly among thirty 30ml (1 1/2-tablespoons) capacity pyramid moulds. 3. Press the pastry firmly around the bases and sides of the moulds, creating a small hollow in the centers. 4. Fill the hollows with the date mixture. 5. Sprinkle the remaining semolina pastry over the date mixture and press firmly to enclose the filling.
  • Bake until lightly golden, then cool on a board for 5 minutes before serving by dusting with icing sugar.
