Frozen cucumber and onion pickles in tangy vinegar brine - a refreshing summer picnic delight.
Ingredients:
  • 8 cups peeled and sliced cucumbers
  • 1 small onion, sliced
  • 2 tablespoons salt
  • 1.5 cups white sugar
  • 0.5 cup white vinegar
Instructions:
  • Place refreshing cucumbers and zesty onions in a bowl of water, sprinkle with salt, and chill until tender, approximately 2 hours. Then, simply drain excess water.
  • In a saucepan, simmer a mix of sugar and vinegar until it boils. Let it cool to room temperature. Pour this sweetened mixture over the cucumbers. Freeze until solid, for 1 to 2 hours.
