Cheesy zucchini and onion casserole, perfect with burgers or add ham/chicken for a tasty main dish.
Ingredients:
  • 3 zucchini, thinly sliced or shredded
  • 1 cup all-purpose biscuit baking mix
  • 4 eggs, beaten
  • 0.5 cup butter, melted
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella or Cheddar cheese
  • 0.5 cup chopped onion
  • 1 teaspoon minced garlic
  • 0.5 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • Combine zucchini with baking mix in a large bowl until fully coated. Mix in beaten eggs, melted butter, Parmesan, and mozzarella cheeses until well combined. Stir in onion, garlic, oregano, parsley, salt, and pepper. Transfer mixture into a 13x9 inch baking pan.
  • Place in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown. Serve warm or at room temperature.
