Triple cheese macaroni bake: gruyere, parmesan, sharp cheddar for maximum flavor in this vegetarian dish.
Ingredients:
  • 1 garlic clove, peeled
  • 10g butter, plus extra to grease
  • 300ml thin cream
  • 1 bay leaf
  • 200g macaroni pasta
  • 60ml (1/4 cup) olive oil
  • Pinch of nutmeg
  • 50g (1/4 cup) grated gruyere cheese
  • 50g (1/4 cup) grated cheddar cheese
  • 50g (1/4 cup) grated parmesan
Instructions:
  • Preheat your oven to 180°C.
  • Prepare the gratin dish by rubbing it with the peeled garlic clove and greasing it well. In a saucepan, combine the garlic clove, cream, and bay leaf. Bring to a boil, then let it sit for 15 minutes.
  • Prepare the pasta as instructed on the package. Drain it well and mix in the olive oil. Transfer the pasta to a big bowl along with the flavored cream, a dash of nutmeg, gruyere, and cheddar cheeses. Season generously, then gently mix everything together.
  • Transfer the macaroni into the gratin dish, generously sprinkle with parmesan, add small pieces of butter on top, then bake for 30 minutes or until beautifully golden and bubbling.
