Delicious macaroni and prosciutto bake with cheesy goodness and a crispy breadcrumb topping, perfect for family dinners.
Ingredients:
  • 280g (2 cups) dried straight macaroni
  • 10 thin slices (about 160g) prosciutto
  • 60mls (1/4 cup) olive oil
  • 2 large brown onions, finely chopped
  • 10.00 gm caster sugar
  • Melted butter, for greasing
  • 60g (3 tbsp) butter
  • 50g (1/3 cup) plain flour
  • 625mls (2 1/2 cups) milk
  • 1 300ml carton thin cream
  • 11.80 gm Dijon mustard
  • Salt & ground white pepper, to taste
  • 110g (1 1/4 cups) grated tasty cheddar
  • 50g (1 cup) fresh breadcrumbs
  • 20.00 ml finely chopped fresh continental parsley
Instructions:
  • Boil macaroni in a large saucepan of salted water according to package instructions until just tender. Drain well.
  • Heat a large frying pan over medium-high heat. Cook half of the prosciutto for 2 minutes on each side until golden. Remove and repeat with the rest of the prosciutto. Then, cool and break into small pieces. (Refer to microwave tip if needed.)
  • Lower heat to medium-low and drizzle 2 tablespoons of olive oil into the frying pan, then add the onions and sugar. Saute, stirring occasionally, for 10 minutes until the onions are tender and caramelized. Remove from heat.
  • Preheat oven to 200°C. Grease your chosen baking dish(es) generously with melted butter.
  • In a large saucepan over medium heat, melt the butter until foamy, about 2 minutes. Whisk in the flour until the mixture bubbles, about 1 minute. Remove the saucepan from the heat. In a jug, combine milk and cream. Gradually add 125mls (1/2 cup) of the milk mixture at a time to the saucepan, whisking constantly to prevent lumps.
  • - Heat the saucepan over medium-high heat and stir until the sauce boils and thickens. Remove from heat and whisk in mustard, salt, and pepper until combined. Stir in cheddar until melted. Finally, add macaroni, prosciutto, and onions, and mix well.
  • Mix together the breadcrumbs, parsley, and remaining olive oil in a medium bowl.
  • Transfer the macaroni mixture into greased dishes/dish, then evenly sprinkle breadcrumb mixture on top. Bake on a tray in a preheated oven for 20 minutes, or until the top is golden and edges are bubbling.
