Macaroni cheese

Classic mac and cheese with a healthier twist.
Ingredients:
  • 250g dried macaroni
  • 60g reduced-fat spread
  • 82.50 ml plain flour
  • 901.25 gm skim milk
  • 250.00 ml grated reduced-fat tasty cheese
  • 9.20 gm olive oil
  • 80g shortcut bacon, cut into thin strips
  • 3 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 250.00 ml fresh breadcrumbs (see note)
Instructions:
  • Preheat oven to 200°C. Cook pasta in a large pot of boiling salted water according to package instructions until al dente. Drain thoroughly.
  • Heat spread in a saucepan over medium heat until foaming. Add flour and cook, stirring, for 1 minute. Remove from heat, whisk in milk, then return to medium heat and stir constantly until the sauce boils and thickens. Finally, stir in cheese.
  • Grease 8-cup ovenproof dish. Mix cooked macaroni with cheese sauce. Transfer to dish. Heat oil in non-stick pan over medium heat. Cook bacon, onions, and garlic for 3 minutes until bacon is slightly crisp. Add breadcrumbs and toss. Sprinkle over pasta. Bake for 15-20 minutes until golden and hot.
  • Optionally, accompany the macaroni cheese with a refreshing salad.
