Whimsical Mad Hatter Salad: Coleslaw, green onions, and broccoli with a flavorful dressing. A crowd-pleaser dish!
Ingredients:
  • 1 (16 ounce) package coleslaw mix
  • 1 head fresh broccoli, cut into florets
  • 8 green onions, chopped
  • 0.5 cup butter or margarine
  • 2 (3 ounce) packages chicken flavored ramen noodles
  • 1 cup slivered almonds
  • 0.5 cup vegetable oil
  • 0.25 cup apple cider vinegar
  • 1 teaspoon soy sauce
Instructions:
  • Combine coleslaw mix, broccoli, and green onions in a spacious bowl. Let sit.
  • In a large skillet over medium heat, melt butter. Combine crumbled ramen noodles, almonds, and sunflower seeds in a bowl. Sprinkle in ramen seasoning packets. Transfer mixture to the skillet and cook, stirring occasionally, until noodles and nuts are toasted, about 8 minutes.
  • In a jar with a tight-fitting lid, mix together sugar, oil, vinegar, and soy sauce. Shake energetically until well blended.
  • Just before serving, toss the slaw mixture with the nuts and noodles, then drizzle the dressing over everything and gently mix to coat.
