Sautéed mixed vegetables in fragrant olive oil creates a heavenly aroma. Perfect for dipping with rye bread, crackers, or your favorite bread.
Ingredients:
0.25 cupolive oil
1 large eggplant, peeled and coarsely chopped
1 medium red bell pepper, cut into thin strips
1green bell pepper, cut into thin strips
1 large onion, diced
1cupcoarsely shreddedcarrot
salt to taste
crushedred pepper flakes
Instructions:
Place the eggplant in a colander, sprinkle lightly with salt, and allow to drain for approximately 45 minutes.
In a large skillet over medium-high heat, warm olive oil. Add eggplant, red and green bell peppers, onion, and carrot; stir well to coat. Cook over low heat for 40 minutes, stirring occasionally, until mixture thickens to the consistency of coarse jam. Season with salt and red pepper flakes to taste.
Chill for at least 1 hour, then serve cold as a tasty condiment alongside your preferred bread or crackers.
