Irresistible crispy cookie with salted peanuts, chocolate chips, espresso, and coconut. Stays crispy for days, perfect for travel or camping.
Ingredients:
  • 1 cup butter
  • 1.5 cups white sugar
  • 1 cup packed brown sugar
  • 2 teaspoons instant espresso powder
  • 1.75 cups all-purpose flour
  • 3 cups old-fashioned oats
  • 1.5 cups salted peanuts
  • 1.3333333730698 cups milk chocolate chips
  • 0.5 cup flaked coconut
Instructions:
  • Preheat the oven to a toasty 350°F (175°C).
  • Cream together smooth butter, brown sugar, and white sugar in a large bowl. Add eggs one at a time, then mix in vanilla and espresso powder. Combine flour and baking soda; blend into sugar mixture until just moist. Fold in oats, peanuts, chocolate chips, and coconut until evenly mixed. Drop spoonfuls onto ungreased cookie sheets.
  • Bake in a preheated oven for 12 minutes, or until the edges turn golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
