Make-Ahead Beef and Bean Burritos

Freeze-ready, quick reheating beef and bean burritos. Simple prep for the best grab-and-go meal ever!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2/3 cup water
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 cup hot cooked rice
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro leaves
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 cup shredded pepper Jack cheese (4 oz)
Instructions:
  • Cook the beef in a 10-inch nonstick skillet over medium-high heat for 5 to 7 minutes, stirring occasionally until fully cooked; then drain any excess fat. Add water and taco seasoning mix, bring to a boil. Reduce heat and simmer uncovered for 3 to 4 minutes, stirring frequently until it thickens.
  • Follow the directions on the can to heat the beans. Combine hot rice, lime juice, and cilantro in a small bowl, and mix well.
  • Follow package instructions to warm tortillas. Spread 2 tablespoons of beans evenly in the center of each tortilla, with a 1-inch border. Sprinkle each with 2 tablespoons of cheese. Divide 1/4 cup of beef mixture and 2 tablespoons of rice mixture evenly down the center of each tortilla. Fold the bottom of the tortilla 1 inch over the filling, then fold the sides in, overlapping to seal the filling. Finally, fold the top over the sides to complete the wrap.
  • For freezing: Individually wrap each burrito in foil, label a 1-gallon resealable freezer bag, place burritos in a single layer in the bag, remove excess air, and freeze for up to 1 month. For heating: Unwrap 1 burrito from the foil, wrap in a lightly dampened paper towel, place on a microwave-safe plate, microwave on High for 3 minutes to 4 minutes 30 seconds, turning once, until heated through (minimum temperature of 165°F).
