Make-Ahead Chicken and Dumplings

Prepare ahead a delicious chicken stew; just add Bisquick™ dumplings for a quick and satisfying meal.
Ingredients:
  • 1/4 cup butter
  • 1 medium onion, chopped (1 cup)
  • 2 medium carrots, chopped (1 cup)
  • 2 medium stalks celery, chopped (1 cup)
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons finely chopped fresh thyme leaves
  • 1/2 teaspoon pepper
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1 1/4 lb boneless skinless chicken thighs (5 to 6)
  • 1 1/2 cups Bisquick™ Original Pancake & Baking Mix
  • 1/2 cup milk
Instructions:
  • Heat butter in a 4-quart Dutch oven over medium heat. Add onion, carrots, and celery; cook for 5 to 7 minutes until vegetables are crisp-tender. Stir in flour, thyme, salt, and pepper; cook for 1 minute. Gradually pour in the broth, bring to a boil, stirring frequently, and boil for 1 minute.
  • Add chicken and reduce heat to medium-low. Simmer, uncovered, for 13 to 18 minutes, stirring occasionally, until the chicken's juices run clear when the thickest part is cut (minimum 165°F). Transfer chicken to a cutting board, shred with two forks into large pieces, and return to the Dutch oven, heating until simmering.
  • Mix Bisquick™ and milk in a medium bowl until a soft dough forms. Spoon by tablespoonfuls onto simmering stew. Cover and simmer over medium-low heat for 9 to 11 minutes until dumplings are fully cooked in the center.
  • For freezing: Follow steps 1 and 2 to cook the chicken stew. Refrigerate covered for 30 to 40 minutes. Divide the stew into two 1-quart freezer containers, cover, and freeze for up to 2 months. For serving chicken and dumplings: Thaw the frozen stew containers by placing in hot water for about 5 minutes until the stew can be easily transferred into a 4-quart Dutch oven. Cover and heat over low heat until boiling. Then, prepare and cook the dumplings as instructed in step 3.
