Ingredients:
  • 4 lb bone-in skin-on chicken breasts (6 to 8)
  • 1 teaspoon garlic salt
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon dried basil leaves
  • 1 tablespoon olive or vegetable oil
Instructions:
  • Preheat oven to 400°F. Line a 15x10x1-inch pan with foil and spray with cooking spray. Trim excess fat from chicken breasts and gently loosen the skin without removing it. In a bowl, combine garlic salt, lemon pepper, and basil, then sprinkle or rub onto the chicken breast meat.
  • Lay the skin back over the breasts and brush with oil before placing them in a foil-lined pan.
  • Bake without a cover for 45-55 minutes, or until the chicken's thickest part reaches 165°F and the juices run clear when cut to the bone.
  • Take out of the oven and allow to cool for 15 minutes.
  • Peel off chicken skin and debone the meat.
  • Use 2 forks to shred the chicken and allow it to cool completely.
  • Cut the chicken into 1-, 2-, or 3-cup portions and store them in freezer-safe bags or containers. Label the portions and freeze for up to 2 months.
