Popular Hawaiian malasadas: Portuguese yeast doughnuts fried until golden, then coated in sweet sugar. Rich with eggs, butter, and milk. A delectable treat.
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 1 teaspoon white sugar
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 6 eggs
  • 6 cups all-purpose flour
  • 0.25 cup butter, melted
  • 1 cup evaporated milk
  • 1 cup water
  • 2 quarts vegetable oil for frying
  • 2 cups white sugar
Instructions:
  • Combine yeast, 1 teaspoon sugar, and 1/4 cup warm water, allowing the mixture to dissolve; set aside.
  • In a small bowl, whisk eggs until they are thick and creamy.
  • In a large bowl, create a well in the center of the flour. Add yeast, eggs, 1/2 cup sugar, melted butter, milk, 1 cup water, and salt into the well. Mix everything thoroughly until a soft, smooth dough forms. Cover the bowl and allow the dough to rise until doubled in size.
  • Preheat oil to 375 degrees F (190 degrees C). Spoon large teaspoonfuls of dough into the oil and fry until golden brown. Drain on paper towels, toss in a bag of sugar, and enjoy piping hot.
