Popular Hawaiian malasadas: Portuguese yeast doughnuts fried until golden, then coated in sweet sugar. Rich with eggs, butter, and milk. A delectable treat.
Ingredients:
1 (.25 ounce) packageactive dry yeast
1teaspoonwhite sugar
0.25 cupwarm water (110 degrees F/45 degrees C)
6eggs
6cups all-purpose flour
0.25 cupbutter, melted
1cupevaporated milk
1cupwater
2quarts vegetable oilfor frying
2cups white sugar
Instructions:
Combine yeast, 1 teaspoon sugar, and 1/4 cup warm water, allowing the mixture to dissolve; set aside.
In a small bowl, whisk eggs until they are thick and creamy.
In a large bowl, create a well in the center of the flour. Add yeast, eggs, 1/2 cup sugar, melted butter, milk, 1 cup water, and salt into the well. Mix everything thoroughly until a soft, smooth dough forms. Cover the bowl and allow the dough to rise until doubled in size.
Preheat oil to 375 degrees F (190 degrees C). Spoon large teaspoonfuls of dough into the oil and fry until golden brown. Drain on paper towels, toss in a bag of sugar, and enjoy piping hot.
