Tomatoes marinated in olive oil and balsamic vinegar, broiled with Parmesan on toast. Enjoy warm with soup on the side.
Ingredients:
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 4 ripe tomatoes, sliced
  • 3 tablespoons mayonnaise
  • 0.5 teaspoon dried parsley
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon black pepper
  • 3 tablespoons grated Parmesan cheese, divided
  • 4 slices bread, lightly toasted
Instructions:
  • Preheat the oven on the broil setting.
  • Combine the olive oil and vinegar in a shallow bowl. Gently toss the tomatoes in the marinade, stirring occasionally.
  • In a small bowl, mix mayonnaise, parsley, oregano, black pepper, and 4 teaspoons Parmesan cheese. Spread the flavorful mixture on all the toasted bread slices. Top 2 slices with marinated tomatoes and a sprinkle of the remaining Parmesan cheese.
  • Place on a baking sheet and broil until the cheese is golden brown, about 5 minutes. Serve immediately, whether open faced or closed.
