Mama's Fab-u-lous Fajitas

Whip up delicious fajitas with steak or chicken for a quick and tasty weeknight dinner!
Ingredients:
  • 0.25 cup lime juice
  • 0.25 cup chopped fresh cilantro
  • 0.5 jalapeno pepper, seeded and minced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1.5 pounds beef skirt steak, cut across the grain into 1/2-inch strips
  • 1 yellow onion, cut into 1/2-inch strips
  • 3 red bell peppers, cut into 1/2-inch strips
  • 2 teaspoons vegetable oil, divided, or as needed
Instructions:
  • Combine lime juice, cilantro, jalapeno pepper, olive oil, garlic, and cumin in a large glass or ceramic bowl. Add skirt steak, onion, and red bell peppers, coating everything evenly. Cover with plastic wrap and marinate in the refrigerator for 30 minutes to 2 hours.
  • Remove the steak, onion, and peppers from the flavorful marinade, allowing any excess to drip off. Dispose of any leftover marinade.
  • In a large skillet over high heat, heat 1 teaspoon of vegetable oil until it shimmers. Sear steak until browned on all sides and still pink in the center, about 3 minutes per side. Transfer to a plate, cover loosely with foil, and let rest for 5 minutes.
  • In the same skillet, heat the remaining oil over medium-high heat. Saute the onion and peppers until just tender but still crisp, about 5 to 6 minutes. Add the meat back to the skillet and cook until heated through.
