Italian Wedding Soup: Succulent beef meatballs, spinach, carrot, and pasta in a flavorful broth. A taste of Italy in every spoonful!
Ingredients:
  • 1 pound extra-lean ground beef
  • 2 eggs, beaten
  • 0.25 cup dried bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried basil
  • 3 tablespoons minced onion
  • 2.5 quarts chicken broth
  • 2 cups spinach - packed, rinsed and thinly sliced
  • 1 cup seashell pasta
  • 0.75 cup diced carrots
Instructions:
  • Combine beef, egg, bread crumbs, cheese, basil, and onion in a medium bowl. Roll mixture into 3/4-inch balls and let them sit.
  • 1. Bring the chicken broth to a boil in a large stockpot, then add spinach, pasta, carrot, and meatballs. Let it come back to a boil, then reduce the heat to medium. Cook at a gentle boil for about 10 minutes until the pasta is al dente and meatballs are cooked through. Serve hot with a sprinkle of Parmesan cheese on top.
