Mama's Whoopie Pies

Decadent chocolate drop cookies filled with luscious marshmallow creme icing.
Ingredients:
  • 4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 cup butter at room temperature
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 1.5 cups milk
  • 0.75 cup butter at room temperature
  • 1 cup confectioners' sugar
  • 2 cups marshmallow creme
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda. In a separate large bowl, use an electric mixer on medium speed to beat 1 cup of butter and white sugar until creamy. Then, mix in eggs and 2 teaspoons of vanilla extract.
  • Mix in half of the flour mixture with the wet ingredients, add milk, and then mix in the remaining flour mixture to form the dough. Use a tablespoon to drop dough onto baking sheets. This recipe yields 50 cookies or 25 whoopie pies.
  • Bake cookies in the preheated oven for about 10 minutes until lightly browned and set. Allow them to cool completely.
  • Using an electric mixer, combine 3/4 cup of butter with confectioners' sugar in a bowl until fluffy. Mix in 2 teaspoons of vanilla extract and marshmallow creme to make the filling. Spread at least 1 teaspoon of filling on the bottom of a cookie and sandwich with another cookie. Repeat for all cookies.
