Cozy up with a delicious and hearty vegetable soup perfect for chilly nights. Pair with homemade bread for the ultimate winter comfort meal.
Ingredients:
  • 1.5 pounds ground beef
  • 1 tablespoon chopped garlic
  • 2 (14 ounce) cans stewed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 cups water
  • 1 (15 ounce) can baby peas
  • 1 cup finely chopped carrots
  • 1 (14 ounce) can chopped spinach, drained
  • 1 beef bouillon cube
  • 1 teaspoon ground black pepper
  • 1 cup uncooked elbow macaroni
  • 2 tablespoons Italian seasoning
Instructions:
  • In a skillet over medium heat, sauté the beef, onion, and garlic until the beef is browned and the onion is tender. Remove excess grease.
  • Combine beef, onion, and garlic in a large pot. Add tomatoes, tomato sauce, water, peas, carrots, spinach, bouillon cube, and pepper. Bring to a boil, then simmer on low heat for 1 hour, stirring occasionally. Adjust consistency with more water or tomato sauce if desired.
  • Mix the macaroni into the flavorful soup and sprinkle with aromatic Italian seasoning. Let it simmer for 10 minutes until the macaroni is perfectly tender.
