Maman's Fresh Strawberry Rhubarb Pie

Delicious no-bake strawberry rhubarb pie with a graham cracker crust.
Ingredients:
  • 1.25 cups crushed graham crackers
  • 0.25 cup melted butter
  • 1 pound fresh strawberries, halved lengthwise
  • 0.5 cup diced rhubarb
  • 0.75 cup white sugar
  • 0.75 cup water
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
Instructions:
  • Combine the graham cracker crumbs with the melted butter and firmly press into a 9-inch pie dish. Arrange a single layer of strawberry halves over the crust.
  • Transfer the remaining strawberries to a saucepan and crush them (aim for about 1 cup of crushed berries). Add in the rhubarb, sugar, water, and cornstarch to the crushed berries. Cook the mixture over medium-low heat until it thickens and becomes translucent, stirring regularly. Remove from heat, let it cool slightly for about 2 minutes, then mix in the lemon juice. Pour the mixture over the strawberry halves in the pie dish.
  • Chill in the refrigerator until perfectly cold, approximately 1 hour.
