Mamma K's Fig Preserves with a Twist

Enhance fig preserves with a vibrant touch of strawberry gelatin for a fruity twist.
Ingredients:
  • 3 cups fresh figs, stemmed and quartered
  • 3 cups white sugar
  • 1 lemon, thinly sliced and seeds removed
  • 2 (3 ounce) packages strawberry-flavored Jell-O® mix
  • 3 1-pint canning jars with lids and rings, or as needed
Instructions:
  • Combine figs, sugar, lemon slices, and strawberry gelatin in a large pot. Allow the mixture to sit for 1 hour. Bring to a boil and simmer over medium heat, stirring regularly, until the foam dissipates and the preserves thicken, approximately 25 to 40 minutes.
  • Boil jars and lids for at least 5 minutes. Fill hot, sterilized jars with fig preserves, leaving 1/4 inch space at the top. Remove air bubbles by running a knife along the inside of the jars. Clean rims with a moist paper towel. Seal with lids and rings.
  • Fill a large stockpot halfway with water and bring to a boil. Using a holder, carefully lower the jars onto the rack in the pot, ensuring there is a 2-inch space between them. Add more boiling water if needed to cover the jars by at least 1 inch. Cover the pot, bring the water to a rolling boil, and process for 10 minutes.
  • Place the jars on a cloth-covered or wood surface, spaced apart, until cool. Press the top of each lid with a finger to check for a tight seal. Store in a cool, dark place for at least 2 days before opening.
