Mandarin roasted pork

Elevate roast pork with seasonal mandarins, cinnamon, and ginger for a flavorful twist.
Ingredients:
  • 36.40 gm olive oil
  • 1 tsp mandarin rind, finely grated
  • 60ml mandarin juice
  • 2.50 gm ground cinnamon
  • 20.00 ml ginger, finely grated
  • 9.60 gm sea salt flakes
  • 4 mandarins, thickly sliced
  • 1.8kg Pork Leg Roast Boneless
  • 1 head cauliflower, cut into florets
  • 1 head broccoli, cut into florets
  • 200g green beans, trimmed
  • Coriander leaves, to serve
Instructions:
  • Preheat the oven to 230C. Mix together half of the oil with mandarin zest, mandarin juice, cinnamon, ginger, and salt in a small bowl.
  • Place the pork in a spacious roasting pan, then drizzle the oil mixture over it and massage it into the pork rind until fully coated. Roast for 30 minutes.
  • Preheat the oven to 180C. Place the cooked pork on a plate. Layer the sliced mandarin in the roasting pan and add the pork on top. Roast for 1 1/2 hours until the pork is fully cooked. Let it rest covered for 10 minutes before serving.
  • Prepare the cauliflower, broccoli, and beans until tender by steaming, boiling, or microwaving them separately. Toss the cooked vegetables in a large bowl with the garlic and remaining oil. Season to perfection.
  • Slice the pork into thick pieces. Top the vegetable mixture with fresh coriander before serving.
