German Christmas almond meringue cookies, only 4 ingredients, dairy and gluten-free.
Ingredients:
  • 4 egg whites
  • 1 cup white sugar
  • 1.5 cups almond flour, or more as needed
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat oven to a toasty 300 degrees F (150 degrees C) and get those baking sheets dressed up with parchment paper.
  • In a glass, metal, or ceramic bowl, whisk egg whites until stiff peaks form. Slowly incorporate sugar, 1 teaspoon at a time, while whisking on high speed. Mix almond flour and cinnamon in a separate bowl, then gently fold into the egg white mixture using a spatula. Adjust consistency by adding extra ground almonds if needed.
  • Use two teaspoons to create small almond mixture mounds, spacing them 2 inches apart on the prepared baking sheets.
  • Bake in the preheated oven for 15 to 20 minutes until golden brown and cooked through. Remove from baking sheets and cool on wire racks.
