Mandolin salad

Transform frumpy ingredients into stunning ribbons with a mandolin for a beautiful salad.
Ingredients:
  • 200 g soft goat's cheese
  • 50 ml milk
  • 3 large raw beetroots different colours if possible, such as golden, candy and red
  • 2 apples
  • rapeseed oil
  • cider vinegar
  • ½ bunch of fresh mint (15g)
Instructions:
  • In a food processor, blend goat’s cheese and milk until it reaches a thick cream consistency. Season with sea salt and black pepper. Spread the mixture on a large platter. Using a mandolin (with guard), finely slice the beetroots and apples together. Toss with rapeseed oil and cider vinegar. Layer over the goat’s cheese mix. Sprinkle with mint leaves before serving hot.
