Ingredients:
  • 1kg Ingham Ready to Roast Turkey Breast, thawed
  • 187.50 ml sweet mango conserve
  • 125.00 ml macadamia nuts, toasted, roughly chopped
  • Zest and juice of 1 lime
  • steamed asparagus, to serve
  • roasted chat potatoes, to serve
Instructions:
  • Preheat oven to 180°C. Unwrap turkey breast and place it in an ovenproof dish, keeping foil on. Bake for 1 hour.
  • In a small bowl, mix together the conserve, nuts, lime rind, and juice until fully combined.
  • Take the turkey out of the oven and discard foil. Line an ovenproof dish with baking paper. Transfer the turkey onto the paper. Spread mango and macadamia nut sauce over the turkey. Bake for an additional 30 minutes without covering, basting every 10 minutes, until golden and fully cooked. Remove from oven and let it rest, covered, for 10 minutes before slicing.
  • Drizzle the remaining sauce over the sliced turkey. Enjoy with delicious asparagus and potatoes.
