Indulgent white chocolate mango mousse cake - a luscious, elegant treat.
Ingredients:
  • 3 ounces white chocolate
  • 3 tablespoons heavy whipping cream
  • 0.75 cup heavy whipping cream
  • 1 cup chopped fresh mango
  • 1 teaspoon white sugar
  • 1 tablespoon hot water
  • 1 (.25 ounce) package unflavored gelatin
Instructions:
  • In a double boiler, combine white chocolate and 3 tablespoons of heavy cream. Fill the bottom of the double boiler with hot water and set it over medium-low heat. Stir occasionally until the chocolate melts, which should take about 3 to 5 minutes.
  • Whip 3/4 cup heavy cream in a chilled glass or metal bowl with an electric mixer until soft peaks form.
  • In a food processor, blend mango and sugar until smooth. Transfer the puree to a bowl and gently mix in melted white chocolate and whipped cream.
  • In a small bowl, pour hot water and sprinkle gelatin over it. Let it sit for 1 minute until fully melted.
  • Combine the softened gelatin with the mango mixture and blend well using an electric mixer for 1-2 minutes. Pour the mixture into a 9-inch springform pan and refrigerate until firm, approximately 3-4 hours.
