Indulge in the sensational taste of fresh mango cheesecake.
Ingredients:
  • 150g Marie biscuits
  • 80g butter, melted
  • 2 x 250g pkts Philadelphia original cream cheese block, at room temperature
  • 107.50 gm caster sugar
  • 300ml thickened cream, whipped
  • 12.00 gm gelatine
  • 62.50 gm hot water
  • 4 mangoes, peeled and sliced (see tip)
  • 42.00 gm lime juice
  • 1 mango, peeled and chopped, to serve
Instructions:
  • Pulse biscuits in a food processor until finely crushed. Mix in butter until combined. Press mixture into the base of a 20cm springform pan. Chill for 15 minutes or until firm.
  • Using an electric mixer, blend the cream cheese and sugar until smooth and creamy. Gently fold in the cream. Dissolve the gelatine in hot water and mix with 1/4 cup of the cream cheese mix. Combine both mixtures and pour half over the biscuit base. Layer with half the mango slices and the rest of the cream cheese mixture. Chill in the fridge overnight to set.
  • Take the cheesecake out of the fridge 15 minutes before serving. Blend the mango and lime juice in a blender until smooth to make the coulis. Add a little water if needed to achieve a pouring consistency.
  • Layer the sliced mango over the cheesecake and elegantly drizzle the coulis on top.
