Tropical mango cake with fluffy frosting.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 3/4 cup mango nectar
  • 1/4 cup vegetable oil
  • 2 tablespoons grated lime peel
  • 3 egg whites
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 2 to 3 medium mangoes, seeds removed, peeled and finely chopped (about 2 cups)
  • 1/2 cup shredded coconut
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and generously coat two 9-inch round cake pans with baking spray that includes flour.
  • In a large bowl, use an electric mixer to blend cake ingredients on low speed until just combined, then increase to medium speed for 2 minutes, while scraping the bowl occasionally. Transfer the batter into pans.
  • Follow the baking and cooling instructions for 9-inch round cakes as per the box.
  • Place 1 cake on a serving plate with the rounded side down. Spread half of the frosting on top, then layer with half of the mangoes and coconut. Add the second cake with the rounded side up, spread the remaining frosting, and finish by topping with the remaining mangoes and coconut. Store in the refrigerator covered loosely.
