Pan-fried, breaded chops smothered in aromatic tomato sauce and baked until moist and tender.
Ingredients:
  • 6 (1 inch thick) pork chops
  • 1.5 cups bread crumbs
  • 2 tablespoons vegetable oil
  • 3 cups tomato juice
  • 1 cup unpacked brown sugar
  • 2 tablespoons vinegar
  • 0.25 teaspoon ground cloves, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Coat pork chops in eggs and bread crumbs for an even coating. Heat oil in a large skillet over medium-high heat. Cook coated pork chops until golden brown on each side for 3 to 4 minutes. If needed, cook them in batches. Transfer golden brown pork chops to a single layer in a large baking dish.
  • In a saucepan, combine tomato juice, brown sugar, vinegar, cloves, salt, and pepper and bring to a flavorful boil. Simmer uncovered on medium-low for 5 minutes, then generously pour over the succulent pork chops.
  • Roast in a hot oven for one hour without a cover.
