Margaret's Southern Chocolate Pie

Indulgent Southern chocolate pie with velvety filling and toasted meringue topping.
Ingredients:
  • 0.25 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 1.3333333730698 cups white sugar
  • 3 egg yolks
  • 1 (12 fluid ounce) can evaporated milk
  • 3 tablespoons butter
  • 1 (9 inch) pie shell, baked
  • 3 egg whites
  • 0.125 teaspoon cream of tartar
  • 6 tablespoons white sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and sift flour and cocoa powder together into a saucepan.
  • In a bowl, combine 1 1/3 cups sugar and egg yolks, whisk until smooth. Gradually add evaporated milk while whisking constantly. Slowly pour this mixture into the saucepan, whisking until well combined with the flour mixture.
  • Stir constantly over medium heat with a wooden spoon until the mixture thickens and coats the back of the spoon (about 15 minutes). Remove from heat, stir in melted butter, and pour into pie crust.
  • Whip egg whites and cream of tartar in a clean glass or metal bowl with an electric mixer until foamy, then gradually add the 6 tablespoons of sugar, one tablespoon at a time, until stiff peaks form. Spread the meringue over the chocolate filling.
  • Bake until the tops of the meringue peaks turn a beautiful golden brown, approximately 10 minutes in the preheated oven.
