Elevate your dishes with flavorful Cuban sofrito, a tomato-based sauce essential for authentic Cuban cuisine.
Ingredients:
  • 1 medium onion, chopped
  • 5 cloves garlic, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 teaspoon dried oregano, crushed
  • 0.25 teaspoon pepper
  • 0.25 teaspoon ground cumin
  • 2 bay leaves
  • 2 tomatoes, chopped
  • 0.75 cup canned tomato sauce
Instructions:
  • In a skillet over medium-high heat, sauté onion and garlic in oil until onion is translucent. Add bell pepper and cook until tender. Season with oregano, salt, pepper, cumin, and bay leaves. Keep cooking until a delicious green paste forms with a glossy finish.
  • Add fresh, ripe tomatoes and cook until they release all their delicious juices. Slowly incorporate tomato sauce and simmer until the sauce has a vibrant red color. Taste and season to perfection. Don't forget to remove the bay leaves before serving.
  • Pour the sauce over the meat, rice, beans, fish, or potatoes. If needed, dilute the sauce with water, wine, beer, or any available liquid.
