Indulgent Scottish shortbread oatmeal cookies - a cherished family tradition, rich and delicious.
Ingredients:
  • 3 cups rolled oats
  • 1 cup packed brown sugar
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon water
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Combine the baking soda and water until fully dissolved.
  • Mix together the oats, flour, and brown sugar until well combined. Incorporate the butter until the mixture looks like coarse crumbs. Add the baking soda mixture and shape the dough into a ball. You can either roll out the dough to 1/4 inch thickness and use cookie cutters or press the dough into a 9x13 inch baking pan.
  • Preheat oven to 375°F (190°C) and bake for 12-15 minutes until golden brown.
